Here's The Recipe For Homemade Soft, Spongy And Delicious Khaman Dhokla
Khaman dhokla is one of favourite dishes among the Gujaratis and why not it be? it's such a delicious steamed snack. Khaman dhokla is loved among all different geographical parts of India and is famous among most of restaurant's. So let's begin its simple yet very interesting recipe to make it at home in just 30 mins.
Ingredients :
- Chickpea flour (Besan)
- Semolina (Suji)
- Salt
- Sugar
- Baking Soda
- Baking Powder
- Cooking oil
- Curd
- Black mustard seed (Rai)
- Green chilli
- Coriander leaves
- Turmeric powder
- lemon juice
PROCESS (in steps) :
- Take a mixing bowl, pour ½ cup water. Add 1 teaspoon sugar, 1/2 teaspoon salt,1 tablespoon oil and 1 Tablespoon lemon juice. Stir it well until all the ingredients are dissolved properly.
- Take about 1cup Besan (125gm) and 1cup Suji (125gm). Stir it well until all the ingredients are dissolved properly. Give it a good mix.
- Now pour the spiced water we made in step 1 and mix it well to make a lump free batter out of the mixture. Add more water if needed to make a thick yet free flowing batter.
- Beat the batter in one direction and Double check the consistency of the mixture.
- Now pour about 3-4 cups of water into a large pot or steamer and place a steel rack in it. Ensure there is enough water in your pot that it can steam upto 20 mins.
- Meanwhile grease along the sides and the bottom of a cake pan using cooking oil.
- when you see water in the steamer is about to boil add ½ tablespoon baking powder and ¼ tablespoon baking soda to the batter and quickly mix in one direction.
- Now pour the batter into the greased container and place it over the steel stand in the steamer. Make sure the water level is below and does not get into the batter container. Cover the lid and let it steam for about 20 mins on moderately high flame.
- Once done using a knife check if the dhokla is cooked well. Now take it out and let it cool down for 5 mins.
- Meanwhile take 1 tablespoon cooking oil into a pan and add ¾ tablespoon of mustard seeds to it , when they begin to crackle add 2 sliced green chillis, add salt to taste and 1 tablespoon of sugar, along with it add 1cup of water and bring it to boil continuously stirring it until sugar gets dissolved. Now turn off the flame and add 1 table spoon of lemon juice to the mixture.
- Now using a knife loosen the sides of dhokla from the cake pan and take it out in a serving plate and slice it down according to the preferred size. Pour the mixture prepared in step 10 over the sliced dhokla, make sure the mixture is absorbed well making the dhokla soft and spongy it is ready to serve.
