My studies are over. Now I thought about what should I do, then I think of doing a job. Then I have chosen to join the hotel industry.
Then I came to Kerala to join a hotel. Now I have joined a 2-star property with IET(INDUSTRIAL EXPOSURE TRAINING) for 3 months. In this 3month period, I am doing work 1month in each department {F&B (P), F&B(S), HOUSE KEEPING}. Normally I like the F&B (P) department. After over my IET. I choose to join the kitchen. Then I am joining as OJT(ON JOB TRAINING )in the same hotel. I have started my chef life in 2014. During the training period, I have faced so many problems. I mean very hard work, daily learning to new things, learning things keep in mind. In the training period, I am learning:-how to keep items in the chiller at the perfect temperature, what is the chiller temperature, how to do work in a proper hygienic way, how to ready mise-en-place, what are the ingredients for which food, how to cut vegetables, cutting, chopping, how to make gravy, etc…. all the basic things I am learned during the training period, after the learned basic thing I am learning food making, how to make food properly, now I started slowly making food for ala-carte order. After 6 months I am getting a commi-III post in North Indian cuisine. And I am doing a total of 3years in this hotel. After 3years there is nothing to learn new things, so I think if I want to learn something new then have to change the hotel. Then I have changed the hotel and joining a 4-star property. and also joining with the commi-II post. learning here some new food, here increase my confidence level for making food. And also learn something other section like Chinese cuisine, south Indian, Continental, grade manager, pantry. etc. And doing work there 1years, after complete 1 years getting a new opportunity in a 5-star property. But in the 5-star property, they give less salary from the 4-star property, that time I have 2 choices, 1 is salary and other is a good opportunity. So I choose the opportunity because after going there, I will learn so many things, the proper way. That time I have a chance to improve my skill.so I decide to go .then give an interview and trial, finally, I am passing the interview. Then after I am joining there finally I am learning lot of things, and now I am very confident to make any things. And I am joining here as commi-I position. And here I am doing 1 year, after that, you all guys know pandemic coming in our life. now I am continuing in the same property.
During this journey, sometimes I think for left this job, because difficult to doing work, but again I thought if I enjoy this difficulty, Then I can do it. Now I am happy and enjoy my job.
This is my chef life journey. But now pandemic is very sensitive, so be careful, stay safe, stay healthy.
