Hi friends …This is Sushilkumar here and presenting you a new easy, spicy, tangy & crispy recipe that is closest to every Indian Heart & that is none other than Samosa….Yes, you are right dear friends. The world-famous and renowned Indian king of street food(Snack). You will hardly find a person who doesn't like Samosa. Everyone has its own memory or story with it. Especially in Rainy Season.

So without wasting time let's start the spicy and tangy journey of The Samosa.

Now we are taking a look at the samosa recipe for 12 pieces. its cooking time is 35 minutes and its Preparation time is 15 minutes. So let's start…😎🍽

👨‍🍳Fixings for Samosa Crispy Outer Layer/Cover.👨‍🍳

*1½ Cup of Maida Flour.

*1 tsp. Carrom seeds <Ajwain>.

*1 tsp. Dalda Ghee/Vegetable Oil.

*Salt to Taste.

👨‍🍳Ingredients for Samosa Inner Stuffing/Masala👨‍🍳

*3 Medium Potatoes(aalo).

*½ Cup Green Peas(Mutters.).

*1tsp Cumin Seeds(Jeera).

*1tsp Ginger Garlic Paste.

*1tsp Red Chilli Powder.

*½ tsp Garam masala

*1 tsp Dry Mango Powder.

*1 tsp fennel seeds (saunf powder)

*1tsp finely chopped coriander leaves.

*5-6 Mint leaves paste(Optional).

*veg. oil-2tsp for mixing masala 

*Extra Oil for frying the Samosa.

*Salt to taste.

👨‍🍳Tangy Chutney Recipe for Samosa👨‍🍳

*Dry Tamarind pieces -5 to 6.

*Jaggary - 100grms.

*Water-½ltr.

*Khajur pieces-50grms.

*Red Chilli Powder-1tsp.

Let's start the Cooking Crispy and Tangy Samosa.

First of all, we will make the Outer crispy cover of Samosa.

🍽 First, take one wide-mouthed bowl and add Maida flour, carrom seeds, 3 tsp.Dalda/Veg. oil and salt to taste in it.

🍽Add the water in these ingredients as per need and make a firm dough(harder than Partha dough.) .Mix it well with your hands. Cover it with wet muslin cloth/ or any cloth for at least 30 minutes.

🍽When our Samosa dough is setting for half an hour take green peas and potatoes for boiling and add some salt in water while boiling these ingredients. After boiling potatoes and green peas transfer them to another container and remove excess water from it. Then smash these ingredients for masala.

🍽After that start the Stove/Gas on medium flame and add 2tsp. oil in Kadhai to fry the samosa masala.Add Cumin seeds, green chillies paste and Ginger garlic paste in it as per proportion. Stir it and cook for one minute.

🍽Add our potatoes and green peas mixture to it. Then take the spices and add Red chilli powder, Coriander powder, dry mango powder, fennel seeds powder & Garam masala powder. Stir it well for 60 seconds. After that add coriander leaves to it. Cook it for 2-3 minutes and off the flame of gas. Transfer this mixture to a container and cool it at room temperature.

🍽After 30 minutes of Samosa dough remove the cloth from the dough and knead the dough again until it smooth and divide it into 6 small portions or poories. Then take one ball of dough and press it between our palms and flatten it a little. Put it on a rolling board, roll it around a shape approximately 5-6 inches diameter, & cut it into two semi-circle shapes.

🍽Then spread the water with your wet finger or brush on the edges of these semi-circle cut pieces to moisten the surface. Then turn it like an ice cream cone shape by folding it from both sides and pressing them to seal the sides & put 2-3 tsp. of potato masala in that cone & seal this cone by pressing the upper side edges with a wet finger.

🍽For deep frying take the oil as per need in heavy-based Kadhai or Pan over the medium flame of gas. when oil is medium hot add 2-3 pieces of samosa cones at one time and reduce the gas flame to low. Fry them until golden brown colour. If you want to cook them in advance for guests then fry them for a minute and remove them when they turn in light golden brown colour & deep fry them again when you want to serve them. 

🍽 Now They are ready to eat … Let's prepare the chutney of samosa.

🍽First of all, take the Dry Temerind pieces, Khajur, Jaggery as per instructions and put them in half a liter of medium hot water for 3 hours. After 3 hours squeeze the tamarind. Then add this mixture to one pan and heat that on medium flame until bubbles come on the mixture . then low the gas flame and add one tsp of red chili and finely cut green chilies pieces in it & cook it for another one minute when it will thick as per your calculation. Then turn off the flame of gas and cool it at room temperature.

After that take one piece of hot crispy Samosa and add Tamarind Chutney/sauce to it & have a taste of this great recipe. I sure you will like it.
