Coconut rice is a popular, much-loved dish! It is also a special dish for weddings in South India. Everyone makes coconut rice differently. What I am sharing is what we do at home.
Please follow some simple tips to get the perfect coconut rice.
Tips
Coconut milk: I used a mixer to grind the raw coconut, added some hot water, and then squeezed it through a fine cloth. I added some more water to dilute it. This is called coconut milk. If you are using tetrapak, add some water and use it.
For one cup of rice, add 1.3/4 cup of coconut milk and ¼ cup of water to get well-cooked rice.
If you add enough salt to taste while the rice is still hot after cooking, the rice will absorb the salt. If the rice is cold, the salt will not reach properly. If salt is added while the rice is cooking, the coconut milk sometimes forms a curd.
I did not use pepper and asafoetida in the masala. If you like, you can add them.
INGREDIENTS
rice-1 cup
1 3/4 liters of diluted coconut milk
water-¼ cup
salt as required
For seasoning: oil -2tbsp, 15- cashew nuts
1 tsp- mustard seeds
1 tsp- cumin seeds
1 tsp- Bengal Gram
1 tsp- black gram ,A Sprig of Curry Leaves, 4 sliced green chillies
1 cup raw coconut grated (half a coconut)
Green coriander—a little
INSTRUCTIONS:
Add water and coconut milk to the rice. Cover the cooker and let two whistles on medium flame and one whistle on high flame.
Once the steam is out, add salt while it is still hot, mix well, and set aside.
Heat oil for seasoning, add cashew nuts first, and then add the rest individually. Finally, add the grated coconut and fry for 30 seconds. Add the seasoning to the coconut rice.
Sprinkle some grated green coriander and serve.
