Puri Curry Recipe Andhra Style

Hello foodies...today I am sharing a simple and super tasty Andhra-style Puri curry recipe. Simple besan onion curry is very popular in Andhra.
You can find this puri curry all over Andhra, served along with dosa and chapati, puris. In some regions, it is known as Bombay Chutney. The ingredients are given below.
Required:
Onion - 250 g, Chillies – 2, Oil - 2 tbsp
Mustard - 1/2 tsp
Chana dal - 1 tsp
Cumin - 1/4 tsp
Dry Chilli – 2
Ginger -1 tsp
Besan - 2 tbsp
Water - 2.5 cups
salt
Coriander - 2 tbsp
Curry leaves - 1 sprig

Instructions

Heat oil in a pan and fry mustard seeds, Bengal beans, black pepper, cumin seeds, black pepper, and curry leaves one after the other.

Add chopped green chilies, chopped onions, and turmeric, and fry the onions on high flame for 3 minutes.
Add ½ liter of water and salt, cover, and cook till the onions soften.
Gradually mix Bengal gram flour with water and mix well. Add chopped ginger and mix.
After adding the Bengal gram flour to the curry, mash the boiled potato and add it to the curry.
After 2 minutes, turn off the stove, add lemon juice, and remove from flame.

Tips:

Onions:

For this puri curry and onions should be sliced lengthwise. These are finely chopped and added to the curry.
Cook the onions in the curry until soft. If you cook them too gently, they won't have any flavor when you eat the curry.

Potatoes:

I added mashed potatoes at the end while making this curry. This is optional. Adding potato gives it a different taste. And it tastes different if you don't.

Lemon juice:

After the curry is done I add 1 tsp lemon juice. This is also optional. Use less lemon juice. If it is too much, it will dominate the other flavors.

Green Coriander:

I usually don't use green coriander. But if you like, you can add.

Bengal gram flour:

Blend the Bengal gram flour to a thin, smooth consistency without lumps. Then add it to the curry and mix well. If not diluted, the cooked curry will be lumpy.

If the curry turns thick:

Bengal gram flour thickens the curry. When the curry becomes thin, take it off the heat. If the curry seems too thick, you can always add hot water even after the curry has cooled.
