Korean Pickle - Quick Recipes

As soon as I say Korea , what comes to your mind? Kdrama or KPOP. Even I love Kdrama, I have watched most of dramas especially in this lockdown. Its true that it has created a buzz in today's youth especially in India, there are countless number of girls who are mad about south Korean food, their dress, skin care, cosmetics and what not.

Is it worth the hype? A big Yeeesss , yes it is totally worth, they have their own well contained culture, their own food recipes, they are mostly non-vegetarians and amongst that they prefer sea-food a lot. So, for any vegetarians its very difficult, but if you go deep down to their recipes, in almost all recipes we can replace non-veg ingredient with veg ingredient. Now we are talking right. So here I am going to introduce you to some basic yet tasty and completely Korean recipes.

3 Simple Korean Pickles

#1 Radish Pickle - Danmuji 

Ingredients

radish - 1(cubes or any shape you want)

water - 100ml

Sugar - 2 tablespoon

salt - 1 tablespoon (according to your taste)

vinegar - 100ml (apple cider vinegar or white vinegar)

black pepper - 4/5

bay leaf - 1/2

Turmeric - ½ teaspoon

Procedure

Cut the radish into desire shape, boil the water with vinegar, add sugar , salt, pepper, bay leaf and turmeric. Let it boil for 5-6 mins. Now turn off the flame let it cool a bit and add the cut radish. Keep it aside for an hour and then you can store it in fridge and enjoy with the meals.

#2 Green chili pepper pickles - Gochu-jangajji

Ingredients

 Green chilli - 8 to 10

water - 3 ½ cup

soy sauce - ½ cup

salt - ½ cup

vinegar - ¼ cup

sugar - 3 tablespoon

Procedure

Cut little or make a hole on chilies and add them into the pickle jar. On the other hand boil water, soy, sugar and salt together for 10 mins. Then add them to the jar filled with chilies and press  and keep a weight on top and keep it aside for 24 hrs. Now remove the liquid out of the jar and boil it again, then cool it and add it back and its ready to be served.

#3 Radish Kimchi - Chonggak kimchi

Ingredients

Radish - 3 to 4

Sugar - 2 tablespoon

Salt - 1 tablespoon

Red chili powder - 2 tablespoon

spring onion - 1 cup

soy sauce - ½ cup

ginger - ¼ teaspoon

garlic - ½ tablespoon

Procedure

Cut the radish into cubes. Add sugar and salt to it and keep it aside for 30 mins with occasional stir. Now, remove the water generated but don't throw it, keep it aside. Then add red chili powder, ginger and garlic and green onions and mix. Add soy sauce and mix properly. Now transfer it into a jar by pressing it thoroughly. Add the the left out stock and store it in room temperature for about 5 -6 hours. Put it back in fridge after that and use it with your meals.
