If you're looking for the best white sauce pasta recipe then you're at the right place !!!! Many people think that making a white sauce pasta is very easy and one can be an expert in that easily. But no !! That's not the case. The measurements of the ingredients, time taken to cook and many other factors are really important . So let's start with the best recipe guys…!!!
All the ingredients used are mentioned below with quantities:-
Pasta- 1.5 cup ( can be adjusted according to need)
Water- 4-5 cups (can be adjusted according to need)
salt - half tsp for boiling pasta, 1 tsp for sauce
oil- 1 tsp for boiling pasta, 2 tbsp. to sauté vegetables
butter - 2 tbsp.
Maida- 2 tbsp.
milk- 500 ml
black pepper powder- ¼th tsp
pinch of nutmeg powder ( optional) ( secret ingredient )
garlic crushed - 1.5 tbsp.
Vegetables- I used corn , olives and onion ,you can add by your choice and adjust the quantity.
mixed herbs , oregano and chili flakes - 1tsp
Grated Cheese - ½ cup
Amul cream - ½ cup
RECIPE-
First add the water to a kadai and let it boil. once it boils, add the pasta, salt and oil and keep it on high flame. Stir it in intervals. Once it's 80% cooked remove it from the flame , strain it and wash with running water so that the starch goes away.
Now for the sauce put the milk in the pan and let it boil. Remember not to add cold milk you need to boil it first. Side by Side add butter to another pan , let it melt a little and then add your Maida. Remember to keep the flame low otherwise it will burn. Continuously stir it and let the Maida cook properly so that you don't smell raw Maida, this would take about 2 mins. Stir the milk also so that it doesn't burn. Once Maida is cooked add it to the milk. ( ADD THE BUTTER AND MAIDA TO MILK NOT THE MILK TO THEM ). Mix it well together continuously using a whisk. Then leave it to thicken ( It can take about 5-7 min but can vary). Once it thickens add salt, nutmeg powder (secret ingredient and optional) mixed herbs, oregano and chili flakes . ( skip chili flakes if you're making for children)
On the other hand add some oil to a pan, then garlic sauté it and add the rest of the vegetables with some black pepper. Sauté it a bit for about 2 minutes and add them to sauce and mix. Then add your pasta to it and mix really well. Now let it cook for about a minute and add cheese or cream or both sauté for a minute for cheese to melt and Tadaaaa !!!!! The best pasta is ready.
