A well-known Malayalam proverb that emphasizes the importance of the Onam sadhya to Malayalis during the Onam festival is "Kaanam Vittum Onam Unnanam." It basically means that even if it means selling jewelry or real estate, one must have the Onam sadhya, also known as Kerala sadhya.
The traditional Onam sadhya is a vegetarian feast encompassing around 26 to 28 dishes, served on a banana leaf.
1. A sadhya is a must for the celebrations of Onam and marriage. On significant occasions like birthdays, some families also throw sadhyas. While some temples offer special sadhya on significant festivals and auspicious days, others offer it every day as a volunteer activity.
2. A traditional Onam sadhya has between 23 and 28 components on average. The quantity of dishes on the banana leaf represents a household's wealth and success. Most Malayalam households don't cut corners at weddings, and a sadhya may have more than thirty items.
3. Because of its pricey ingredients, the Payasam is one of the most elaborate dishes in this meal and is therefore highly regarded. The range of Payasams offered is directly correlated with an individual's social standing. A variety of ingredients, including rice, fruits, lentils, rice pasta, and vermicelli, are used to make payasams. Typically, coconut milk is used to boil these items, and jaggery or sugar is used to sweeten them.
4. A Kerala Sadhya is usually consumed by hand, and the arrangement and sequencing of its components are based on Ayurvedic science. Every item has a different flavor and texture. Serve 12–13 mostly dry or semi-dry ingredients on the upper half of the banana leaf. Sambar, curry, and rice and lentils are offered in the lower part. As you work your way through the dinner, you are free to select any side item from the top that appeals to you.
5. Lentils and ghee are served with the rice once you are seated. The Onam sadhya has a gentle, non-spicy, and pleasant beginning. The hot sambar that consumes the majority of your rice is served next. In contrast to other cuisines, the Payasam dessert is typically consumed in the middle of the meal as a palate-cleansing measure. After replacing the sweetness with a sip of peppery rasam, return for more rice. All to be drank with buttermilk for digestion. This brings the meal ritual to a close.
6. A banana leaf is always used to serve Onam, also known as Kerala sadhya. The leaf's wider side is positioned on the right. You should fold the leaf away from you if the meal has pleased you. First to be served is salt. You can adjust the amount of salt to taste if you think any of the curries are under seasoned.
7. On a lucky day, a banana leaf containing every dish is offered to the gods before you and your guests begin to feast. This is also the reason why there are never any non-vegetarian treats served here.
