A classic and flavorful cuisine from the picturesque Kashmir region in India is Kashmiri Chicken, also known as Kashmiri Chikkan.   • 1 teaspoon dried ginger powder (sonth)
  • 1 cup yogurt, whisked
  • 1 cup tomato puree
  • Salt, to taste
  • Fresh coriander leaves, for garnish

Ghee or vegetable oil should be heated in a big pan over medium heat. Add the chopped onions and cook them until they are caramelised and golden brown.

The ginger and garlic paste should be added to the pan and sautéed for a minute to remove the raw aroma.

The dry spices, including turmeric, ground coriander, ground cumin, fennel seeds, and dried ginger powder, should next be added, followed by the green chilies that have been slit. After thoroughly mixing the spices into the onions, simmer for a minute to let the flavours meld.

When the chicken pieces are lightly browned on all sides, add them to the pan and cook them on medium heat.

Reduce the heat to low when the chicken has browned, then stir in the yoghurt. Making sure that every piece is coated, stir the yoghurt into the chicken mixture. Cook for a short while to enable the flavours to blend.

Add the tomato puree and salt to taste. To thoroughly incorporate all the ingredients, stir well. For about 20 to 25 minutes, or until the chicken is soft and cooked through, simmer the chicken on low heat with the lid on the pan.

Check the seasoning once the chicken is done and make any necessary adjustments. For a burst of flavour and freshness, garnish with fresh coriander leaves.
