Chicken is a favourite one for every people.Majority of people loves to eat it.Because variety of dishes can be made with this.A simple and tasty item made out of chicken is kadai chicken which is tastier and a treat for non veg lovers.
INGREDIENTS
Chicken -1 kg
Fennel seeds- 1 tablespoon
Shallots - 15
Tomatoes -3
Ginger garlic paste-50grams
Garam masala-1 tablespoon
Kashmiri chilli powder -1 teaspoon
Chilli powder -1 teaspoon
Turmeric powder -1 teaspoon
Lemon -1/2
Curd - ½ cup
Salt - As required
Black Pepper powder - 1 teaspoon
Curry leaves - for garnishing
MARINATION STEPS
Take a chicken in a pan wash thoroughly with turmeric powder. So that if any bacteria present in the chicken can be killed.Now let us see the marination steps one by one.
*Take a bowl. Add 1 spoon of turmeric powder.
*Next add 1 teaspoon chilli powder and kashmiri chilli powder.
*Then add ginger garlic paste into it.
*After that add garam masala into the above ingredients.
*Squeeze the lemon into the mixture. Mix well.
*Add the curd and the required salt into the mixture.
*Finally add chicken and mix well and close the bowl.
*Leave the chicken for atleast 1hour to be perfectly marinated so that the chicken have perfect taste.
Tip:Blend the Tomatoes into a puree so that we can get gravy extra and it tastes good.
INSTRUCTIONS
Take a kadai(pan).Heat it and add oil.
Once the oil is heated add fennel seeds into it.
Add the chopped onions into the oil and saute well. Saute until the onions turns into golden brown. But careful of it should not turn black colour as it will destroy the taste of entire dish.
Once the onions turns golden brown add the tomato puree into it and saute well.
Saute well until the raw smell of tomatoes gone and oil squeezes out.
Now add the marinated chicken into the pan.Mix well and saute it often.
Add ½ cup water into the chicken don't add too much water because the chicken itself releases it.
Once the water releases taste and see whether the salt and spiciness is perfect.
Close the pan and let it cook for some more time.
Once the chicken is cooked add black pepper powder and curry leaves into it.
Mix well and let it be sometime to get dry.
Switch off in this stage if you wants a gravy consistency.
Otherwise let it be in low flame to get dry chukka.
Once the water gets dried garnish it with coriander leaves and switch off the flame.
Serve hot.
SERVING SUGGESTIONS
It goes well with chapati,parotta,Dosa and white rice.
