Masala dosa:
Masala dosa is popular tambrahm cuisine from Tamil Nadu. This dish is prepared using rice batter called 'dosa' with spicy and tangy masalas like channa masala(chickpea curry), kari patta (curry leaves)and coconut along with sambar, which is usually served with rava idli/vada. Dosa can be easily made at home and requires very little ingredients.
Idiappam:
Idiappam or steamed rice flour dumplings are a favorite food of the people of Tamil Nadu. These small balls of rice dough are usually filled with vegetables and spices. They may be deep fried or simply stewed and eaten plain. You can make your own idiyappam at home, just need few simple ingredients.
Koottu / Pongal:
Koottu or pongal is a famous festival celebrated across South India especially in Tamil Nadu. It's a traditional cereal based dish cooked over fire and is considered sacred by Hindus. It is believed that this dish has been cooked since time immemorial without any electricity or other modern kitchen appliances. A special nine pot is used where water is heated first then soaked millets are added and kept aside to soak for about 60 minutes. On the other side, jaggery and ghee are melted together and the whole mixture is poured into the soaked millet.
After that salt and cardamom powder are added and stirred continuously until the grains expand. The final step involves adding sugar syrup or honey and stirring well.
Vadacurry :
It is a dish prepared with red chilies, garlic, ginger, curry leaves and coconut milk.
Chana Masala | Chickpea Curry:
This curry contains chickpeas, ginger, garlic, green chillies, coriander leaves and spices like cumin seeds, fenugreek seeds, black pepper, mustard seeds, turmeric powder, cinnamon powder, cardamom pod, cloves, bay leaf etc., This curry tastes great served hot or cold.
Kariveppila Vathal | Pumpkin Curry / Kuzhambu:
A popular dish from the South Indian state of Tamil Nadu. This pumpkin curry can be prepared with either fresh or dried pumpkin. Fresh pumpkins are cooked with coconut milk and spicy gravy along with other vegetables like potato, brinjals, carrots, beansprouts, tomatoes etc. Dried pumpkins are soaked overnight and then pressure-cooked with water and spices. Both curries taste delicious when served with Naan (Indian flatbread) and rice.
Bisi Bele Bath :
Mixed vegetables cooked in Coconut Milk, this is a popular side dish in Tamil cuisine.
Idli vada:
Idli Vada is a popular snack food that has a unique sour taste. It is made using idlis (vadas) and then dipped into a creamy sambar gravy. A special variety of pickle is used to give the crispness in the vada.
Mysore pak:
This dish is famous for its spicy taste and is prepared from fresh ingredients. There are many variations but this is the original version. Ingredients include green chillies, tomatoes, onions, coconut milk, gingelly oil and spices. This dish is usually cooked over firewood and serves as a side dish.
