Ingredients
1 cup Chickpea Flour | besan | all purpose flour
1 cup buttermilk
1 cup sugar
Instructions
Keep tray lubricated with buttermilk.
In a pan, preferably non-stick, add a teaspoon of buttermilk and roast over medium-low until fragrant. It will take 10 minutes.
When finished, sift flour evenly.
This step is essential as it will create a smooth texture for the mysore sweet.
Mix this sifted wine with 3/4 cup buttermilk and make a smooth paste. Ghee should not be hot.
In a large deep saucepan, preferably non-stick, add sugar and add 1/2 cup of water.
When the sugar has dissolved, stop stirring and bring to a boil until it reaches a string-like consistency.
You can test the consistency of a string of syrup between your thumb and forefinger.
When it has reached the right consistency, add the buttermilk and tapioca that we have mixed together. Consistency is paramount, otherwise you will end up with a hard or crumbly mysore. It is  a traditional sweet anyone can do that in our home.
Now keep the heat to medium and stir constantly adding the remaining 1/4 cup of buttermilk at regular intervals.
Stir well until it leaves the sides of the pan and doesn't stick to the bottom.
At this point, transfer it to a greased baking tray. It will spread smoothly.
Cut it into pieces with a knife or pizza cutter while it is still warm.Thank you for your valuable time✨. Do read my previous blogs.
