Homemade Truffles are the best… 

When it comes to truffles. 
Truffles are the easiest candy to make. Cream, chocolate and time are all it takes to create something elegant, luxurious and delicious.

Make sure to use organic ice cream and high quality chocolate. If you can find it, the best chocolate is high 62 and up. The quality of these ingredients will affect the final product.

Best Chocolates for Truffles
The best chocolates for truffles are chocolate blocks or bars (not chocolate chips), preferably with a higher cocoa content. Look for chocolate with 60% cocoa or more on the aisle. Guittard makes 64% and 70 % chocolate bars. Ghirardelli's also makes high 60% and 70 % baking bars. We also love Scharffen Berger.

Any chocolate that contains more than 85% cocoa can be too bitter and have too much cocoa solids to form a proper emulsion, resulting in spoiled or not very creamy ganache. For truffles over 70 high, find another recipe.

Use chopped chocolate, not shredded chocolate, if you want creamy truffles. The chocolate chips have a non-melting coating to help them retain their shape, which prevents the ganache from melting in your mouth. If all you have on hand are chocolate chips, feel free to use them.

Do not use plant-based chocolate coatings.

How to Store Chocolate Truffles

Homemade truffles can last up to 2 weeks in the refrigerator and for up to 6 months in the freezer. For the best texture and flavor, bring them to room temperature before serving.

Even if you're planning on gifting your chocolate truffles, be sure to store them in the fridge or freezer. Then, move them to your choice of chocolate box or bag before giving them to the lucky recipient.
