The mango season has started . Every mango tree has started to bloom and started to give us mangoes . In Kerala pickles has great value in food especially in sadhya , for wedding even in houses pickles have major priority .
Even if have no curry to eat our lunch or dinner , Keralites use pickles and chammanthey as a substitute .
Now i am searching a easy Kerala style mango recipe .
1st Recipe :- Instant mango pickle
Ingredients
Take ½ kg raw mango
Take 2 teaspoon Chili Powder
Take half onion
Some salt
Some Coconut oil
Preparation
Clean the mango using normal water . Cut the mangoes into small pieces . Allow to drain out the water content . Then take onion and cut into small pieces . Take a bowl . Add the chopped mangoes and onions to it . Then add chili powder , Salt and coconut oil and mix it well with your hand or using spoon . And leave it for 5 minutes . Your instant mango pickle is ready .
2nd Recipe
Ingredients
Mango 1 kg
Mustard oil ¼ kg or Coconut oil ¼ kg
Chili Powder 2 teaspoon
Pickle powder 2 teaspoon
Mustard 1 teaspoon
Garlic 10 gloves
curry leaf as needed
asafoetida powder as needed ( kayam )
Vinegar 2 teaspoon
salt as needed .
Preparation
Take 1 kg of mango clean it with normal water and cut into small pieces as you want . Then allow to drain extra water from it . Add salt and mix it well and leave it for ½ hour . Or you can sun dry for 1 day . Then take a kadai and leave it until it heat . Then add ¼ kg mustard or coconut oil into it . Let Wait until the oil heat . Then Add Mustard to it.
Then add garlic to it. Sauté until it become brown colour . Then add curry leaf's into it . Sauté until it become crispy . Then turn off the flame .
Then add 2 tea spoon chili powder and 2 tea spoon pickle powder to it . Then saute for 2 minutes . Then turn on the sim . Put ion very low flame . Then saute until it ready . Then add some asafoetida powder to it . Let it to saute for 2 minutes . Now the time has arrived . Add the mangoes to it . And saute nicely to absorb the chili powder , pickle powder , asafoetida powder and salt to it . Saute it for 5 minutes . Then close it with a lid for 3 minutes . Then add vinegar to it .And our Kerala style pickle is ready . Store it in dry air tight container . And remember to take the pickle with a dry spoon .
