So this time I am going to share a recipe that I tried accidentally but turned out so good. The actual story behind the accident was I planned to make Vegetarian Manchurian but I ran out of sauce that day and I already prepared the balls , I looked for several alternatives and finally decided to go for kofta curry.
Here is the recipe,
To make Manchurian balls ,
INGREDIENTS
Cabbage - Shredded 1 cup
Carrot - Shredded 1 cup ( you can also add other vegetables of your wish like cauliflower , peas etc. )
Corn flour - 2 and half cup
Maida ( All purpose flour ) - 1 and half cup
Kashmiri chilly powder - 1 table spoon
Salt - As required
PROCESS
Take a bowl mix corn flour , Maida , Kashmiri chilly powder and salt with a spoon and add the vegetable and give them a mix . Add a small spoon of water as you won't need more water cause the vegetables have their own water content. Mix them and roll them to small balls and let them to set in refrigerator for 15 mins. After 15 mins take them out and fry them until they are golden brown. You can also eat this vegetarian balls at this stage as it serves as a perfect snacks for kids.
To make Kofta curry,
INGREDIENTS
Onion - cut into medium size ( 3 onions )
Tomato - cut into medium size ( 2 tomatoes )
Cashew nuts - 15-20
Green chilly - 2-3
Ginger - 1 inch in size
Garlic - 2-3 big garlic cloves
Turmeric powder - ΒΌ tbsp.
Kashmiri chilly powder - 2 tbsp.
Coriander powder - 1 tbsp.
Cumin powder - 1 tbsp.
Salt - As required
Sugar - A pinch or two tsp
Butter
Oil
Cumin seeds - 1 tsp
Cinnamon - 1 small stick
Cloves - 5 - 7
Cardamom - 2 to 3 in numbers
Peppercorns - 1 tsp
Kasuri methi - 1 tbsp.
Fresh cream or Milk.
PROCESS
Take a wide pan , add some butter and oil to it and let it heat for few mins. Once the oil and butter is heated , add cumin seeds , cinnamon , peppercorns , cardamom and cloves . Give it a stir and add the cut onions chilies , ginger and garlic . And saute them nicely till the onions are golden brown. At this stage add the chopped tomatoes and the mix them. Turn off the stove and let them cool for sometime. Once its cooled down add them to a mixture jar at this stage those who don't have fresh cream add five table spoon milk in the mixture jar and grind them to a fine paste.
Use the same pan add some oil to it and once its hot pour the grinded paste to it and stir it if its too thick you can add some water or milk based on your preference and let it boil once its boiled add some crushed Kasuri methi to it and and at last add the Manchurian balls and stir them once.
For garnishing you can add fresh cream and coriander leaves. And serve it hot.
