Potato Rice – There are many recipes that can be made with leftover rice, but this Potato Rice is very special. There are very few dishes that everyone likes. And it is a dish that is aromatic and popular with all.
I modified my mother's recipe from my childhood. She used fresh cilantro. I changed it up and added mint and curd to keep it from discoloring and to get a nice, delicious taste. This coriander and mint paste is a little like Punjabi Hariyali Chutney.
This rice is delicious with a cool raita.
Tips
Potatoes:
Peel the potatoes and cut them into medium-sized pieces.
If you get very old or sprouted potatoes, they will taste sweet. So use fresh potatoes.
Some more tips:
If you want, you can make the same recipe with brown rice.
It can be made with leftover rice or fresh hot rice. If the rice is too hard, you can add a little water to the mint paste and it will soften the rice.
If the tomato slices are a bit large, you can taste them under your teeth. Or added to rice.
If you toss the rice on high flame the flavors will be better.
Ingredients:
Mint coriander paste
1 bunch of mint
1 bunch green coriander
5 garlic
1/2 inch ginger
3 - 4 green chillies
salt
3 tablespoons of curd
Juice of 1/2 lemon
Water for grinding
For rice
3 tablespoons of oil
150 grams of potato
1 onion (sliced)
1 sprig of curry leaves
1 tomato slices
1/2 tsp cumin powder
1 tsp chili powder
1 cup cooked rice (185 g)
Instructions:
Make a smooth paste with all the ingredients set for Hariyali Paste or known as mint paste (ingredients given above for mint paste ).
Heat oil in a pan, add potato pieces, and fry until golden.
Add the onions and let them soften. Then add tomato slices and cook on medium flame till the tomato becomes skin.
Once the tomatoes are cooked, add the chili powder and cumin powder and let the oil float to the top.
Add the mint paste and fry the fried masala until the oil rises.
To the thickened paste, add the rice mix on high flame and make the paste stick to the rice grains.
Toss on a high flame until the moisture evaporates. Then serve hot.
