Hello friends, today I don't have time to prepare a curry and I want to do something different and wonderful. so I decided to make carrot rice 

You want some new, unique rice for the lunch box
Carrot rice is healthy and very quick to make. My style of carrot rice does not contain ginger garlic spice. Some spice but nothing left. They tickle your palate while you eat and lighten your stomach when you're done.

Carrots are packed with benefits—they promote healthy vision, balance your blood sugar, help with weight management, lower your cancer risk, regulate blood pressure, reduce heart disease, improve immunity, and boost brain health. You won't regret including more of these vegetables in your diet.

This carrot rice is aromatic and is a perfect dish if you have guests over for dinner.
Tips:
The rice should be soft. If you add some salt while cooking the rice, the salt will be absorbed properly. If added later, the salt will not stick to the rice.

The little sambar powder we add gives the rice a nice aroma and taste.

You can use leftover rice 
Ingredients
1 cup rice (softened and cooked with salt) & optional

(also can use basmati rice)
1 cup grated carrots
2 tablespoons grated raw coconut
1/2 cup chopped onions
2 green chillies
2- sprigs of curry leaves
2 -tablespoons of green coriander
1 tablespoon lemon juice
1 tsp sambar powder(I used homemade sambar powder )
salt
3 tablespoons of oil
15 cashews
1-inch cinnamon stick
4 cardamoms
4 cloves
1 biryani leaf
Instructions
Heat oil, add cardamom, cloves, cashews, and biryani leaves, and saute until fragrant.
Add onion slices, green chilies, and curry leaves and saute until the onions lose their raw taste.
Add the grated carrot and fry for three minutes until the raw smell goes away.
Add salt and sambar powder. Add raw coconut and mix well. Add cooked rice and mix well.
Before you remove the rice from the flame, squeeze ½ lemon and sprinkle with green coriander.
