Pepper Chicken Stew

 A  healthy taste for life!

Pepper Chicken Stew is a healthy dinner with brimming flavors! We need a large pan or pot to witness the beauty of how juicy chicken, loads of veggies quickly come together in this colorful healthy meal.

I love a good cooked steamed food because it an ideal healthy dinner meal from all aspects. It delivers in flavors, simplicity and a healthy balance of proteins and veggies. In this case, chicken legs and vibrant veggies are diced in olive oil and then a wheat sauce added to give a creamy texture (optional). Easy dinner recipe a whole family would love!

What's in this easy stewed recipe?

Just add veggies and  chicken to the pan and toss for a while and dish would be ready. You can add varieties of vegetables but here is the classic version

  • Chicken leg pieces : To be cut into two pieces is advisable
  • Carrot : For its rich nutrients. I preferred long strips in shape but you can keep it simple round shaped
  • French beans : It adds its richness of minerals and vitamins to the recipe. I added handful of them
  • Potato : I added one to the recipe to get the benefits of fiber
  • Ginger and Garlic : Essential aromatics for the recipe
  • Green Chilly : to add spiciness but this is optional
  • Cilantro : It gives an additional flavor of refreshment

Prep Time!

Before we begin with the recipe, Marinate the chicken legs in salt and turmeric  and black pepper for 30 mins

  • Stir fry  the vegetables : In a pan, add oil  and stir fry ginger  garlic, chilies and  then sauté  chopped carrots, French beans and potatoes
  • Sauté  and cook the chicken : Add the marinated chicken the vegetables and cook for 5 mins on low to medium flame
  • Add water and cook together : Final Step! Add pinch of salt and cilantro. Add half cup of water, mix well and cook for good 20-30 mins on medium flame. That's it!

Tips for the best Stew

  • Can add corn flour paste or wheat paste to the water for creamy texture ( I usually prefer doing this)
  • Don't overcook or undercook vegetables and chicken : It does adds to the difference in taste and texture and can spoil the perfect taste you expect
