During the lockdown, I tried my hand in cooking and baking and I must say I am not bad.. Well, my cheesecakes are ok ok according to me and I actually enjoy making them. I tried combining three of my favorite things; Red Velvet, Cheesecake and brownies. I have tried my hand at various things from baking chicken to making a steak. As I have sweet tooth I made cakes and truffles which are all recipes from online networks.. I have always wanted to start a small café which serves desserts and wine.. Now i am a little more closer as I have the confidence to make a few desserts.. The lockdown of 2020 helped me boost up my confidence for baking and cooking.. I have experimented with biriyanis and other cuisines like pasta, spaghetti etc.,. But my favorite still remains cookies, cakes and anything with chocolate in it. The first time I realized that I enjoy roasted almond on chocolate cake.. For those of you stuck at home do try it out..

Ingredients that you will need for the brownies.

1 stick butter

2 eggs

1 cup sugar

2.5 teaspoons of vanilla extract

¼th cup of cocoa powder

a pinch or two of salt

½ teaspoon vinegar

¾th cup of flour

Now for the cheese cake part of the dish..

1 cream cheese pack

1 teaspoon vanilla extract

¼th cup sugar

1 egg

Lets get to the preparation part of the procedure.

  1. Melt the butter on a low medium flame. Add the sugar, 1 egg, vinegar, vanilla extract and whip it well.. Add in the red color and whip well until you reach a good consistency.
  2. Add cocoa powder, flour, salt into the mixture and whip again till its thick and gooey and then follow the folding method with a spatula.
  3. Now for the cheesecake part. Mash the cream cheese with a fork and add 1 egg, ¼th of the sugar, vanilla extract and whip by using your hand and not plugging in the beater.
  4. Line the vessel with parchment paper and add the mixture. Leave in 3 tablespoons on all corners with cream cheese and spread the rest along the whole batter in swirls..
  5. Pre heat the oven and put the batter in at 350c for 20 - 30 minutes or as long as its cooked.
  6. Let it cool, cut it in half and make squares and serve…
