Mysore Pak is a popular South Indian sweet made with gram flour (besan), sugar, and ghee. It has a rich, melt-in-the-mouth texture and is often served during special occasions and festivals. Here's a detailed recipe for making Mysore Pak at home:

Ingredients:

  • 1 cup gram flour (besan)
  • 1 cup sugar
  • 1 cup ghee
  • 1/4 cup water
  • A pinch of turmeric powder
  • A pinch of cardamom powder
  • A few strands of saffron (optional)
  • A greased plate or tray for setting the Mysore Pak

Instructions:

  1. Take a heavy-bottomed pan or kadhai and heat it on medium flame. Add 1/2 cup of ghee and let it melt.
  2. Once the ghee has melted, add 1 cup of gram flour and mix well. Roast the gram flour in the ghee until it turns golden brown and gives off a nutty aroma. Keep stirring constantly to prevent burning and to ensure that the gram flour is cooked evenly.
  3. Once the gram flour is roasted, turn off the heat and set the pan aside.
  4. In another pan, add 1 cup of sugar and 1/4 cup of water. Heat the mixture on medium flame until the sugar dissolves completely.
  5. Add a pinch of turmeric powder to the sugar syrup and mix well.
  6. Now, add the sugar syrup to the roasted gram flour mixture and mix well.
  7. Turn on the heat and cook the mixture on low flame. Keep stirring continuously to avoid lumps and to ensure that the mixture does not stick to the pan.
  8. Add the remaining 1/2 cup of ghee to the mixture and keep stirring. The mixture will start to thicken and leave the sides of the pan.
  9. Add a pinch of cardamom powder and a few strands of saffron to the mixture and mix well.
  10. Once the mixture starts to leave the sides of the pan and forms a thick, frothy mass, it is ready to be set.
  11. Pour the mixture onto a greased plate or tray and level it out with a spatula. Let it cool for a few minutes.
  12. While the Mysore Pak is still warm, cut it into desired shapes using a knife.
  13. Let the Mysore Pak cool completely before serving. It can be stored in an airtight container for up to a week.
