Roasting vegetables is one of the easiest, most reliable ways to cook them. Chop your vegetables, with the harder ones, like carrots and potatoes , cut up into smaller pieces. Spread on a banking sheet or two _ don't crowed! and roast for about 30-40 minutes, or until they look and taste good. Once you've got roasted veggies, you can toss them in some pasta, a salad  or put them on a sandwich. 

RECIPE OF VEG SANDWICH

A simple mixed vegetables sandwich for breakfast or evening snacks you can make under 15 minutes .This veg sandwich is so delicious, sort of healthy & is devoid of sauces, chutney or cheese it is hard for me to make any sandwich that has these ingredients listed as I never has them in hand . whenever my people at home ask me for a good sandwich this is something that comes to my mind instantly. This veg sandwich recipe is made without grill , toaster or oven . It is just made on a pan  or griddle in the simply way. I have not used any sauce or green chutney. 

So it is good even to make on a busy weekday or busy weekend morning for the breakfast as it is need for only a handful or ingredients that we most have in the pantry. I have used for the carrots, onions, corn, beans& bell pepper. you can also use some boiled potatoes , sliced or cheese if you can like. tomato is used for binding the veggies, if skipped the filling will turn out dry. to blind the veggies , you can will need to either use cheese or grill it in a sandwich maker. sandwich is very taste dish .

tips to make sandwich - you can use any quick cook mix vegetables of your choice. this veg sandwich can also be made with a single veggie like carrot or bell pepper or sweet corn alone . you can also use the pre-chopped mix veggies form the frozen sections. Feel free to use any cheese of your choice to make a cheese veggies sandwich. I sometimes use the mozzarella cheese or in this. you can also use any chutney. like this green chutney . if you have in hands . just spread it over the bread and then add the vegetables. For healthier option make the veg sandwich with brown bread or whole grain bread. you can also make this in a sandwich toaster.
