Best Recipe I Have Ever Tried

Hey everyone.! Cooking is one of the most interesting thing to do for everyone.No one can hesitate to cook. Cooking make us to learn something new in every try of our cooking. Cooking is a art skill, not everyone gets it.Bring out delicious recipes is not much easy to do only when we love our cooking we give our best.

Here, once i tried new recipe called “CHETTINAD PEPPER CHICKEN MASALA” which i recently fell in love with. I utmost love through the process of cooking and enjoyed it while having it with prefect rotis.

WHAT IS CHETTINAD CUISINE?

Chettinad is a region in Tamil Nadu inhabited by Chettiar community.The cuisine of Chettiar community is one of the most flavourful cuisine and is also spiciest as well.Use of freshly ground spices along with coconut and curry leaves makes this cuisine so delicious.This is one of the most famous dishes from this region is the Chettinad pepper chicken.

So, i could like to sharing that recipes, hope you all will try it and enjoy it.

First, Ingredients:

TO MAKE CHETTINAD MASALA POWDER

  • Coriander seeds - 2 tsbp
  • Cumin seeds - 1 tsp
  • Fennel seeds - 1 tsp
  • Peppercorns - 3 tbsp
  • Red chilli - 2 nos

TO MAKE CHETTINAD PEPPER CHICKEN MASALA

  • Chicken - 1 kg
  • Oil - 3 tbsp
  • Whole spices -(Clove, Cardamom & Cinnamom)
  • Onion - 4 nos chopped
  • Pound Garlic and Ginger - 2 tbsp
  • Tomato - 3 nos chopped
  • Turmeric powder - ½ tbsp
  • Water - 2 cups (500ml)
  • Chettinad masala powder - 5 tbsp
  • Curry leaves
  • Salt

METHOD

TO MAKE MASALA POWDER

  1. To a man add coriander seeds, cumin seeds, fennel seeds, peppercorns and red chillies. Dry roast them for 3 mins or until you get nice aroma.
  2. Cool the spices and grind them into fine powder.

TO MAKE PEEPER CHICKEN

  1. To a pan add oil and whole spices and onions. Saute until they are brown.
  2. Add freshly pound ginger & garlic. Saute for few mins.
  3. Add the tomatoes and saute it.
  4. Once the tomato is half cooked add the turmeric powder and salt.
  5. Now add the chicken pieces well.
  6. Once the chicken is no more pink add water.Mix well.
  7. Cover and cook for 15 mins.
  8. After the 15 mins, add the ground masala mix.
  9. Cook until the moisture evaporates.
  10. Add a few curry leaves and mix.
  11. Cover and cook for another 10 mins
  12. Check for seasoning and add if required.
  13. Chettinad pepper chicken masala is ready.

I have been a fan of the Chettinad cuisine since the time I tasted it.I have made it many times for my family and each time, they eat it with much love and satisfaction.
