We always heard that the taste of malabar is on peak. They enjoying to serve special recipies to their guest. The land of prawns, kakka , moru(oyster) ,etc. Thenga chor is a famous rice item of malabar areas. But it is fabulous when it came with their prawn fry on special style of masala. Ingredient for Thenga chor;. Rice - 2 glass. Onion - 2 chopped. Tomato - 2 chopper. Ginger - a small piece. Garlic - 10 cloves. Green chilly - 3 nos. Curry leaves. Coconut - 1cup. Fennel seeds - 1 t spoon. Turmeric powder – 1 t spoon Prawns – 500g. Coconut oil- as needed. Ghee – optional Method to cook;. Take a rice bowl or pressure cooker for cook the Prawn Thenga Chor. Place it on law flame and add few coconut oil and ghee. Ghee is optional which give nice taste for Thenga Chor. Add chopped onion into hot bowl, stir and wait for half cook of onion. Grind ginger,garlic and green chilly on grinder. pour this to the onion,add salt.Put some fresh curry leaves and stir well. Add turmeric powder and mix. Then add chopped tomato .Close the bowl with its lid for cook all masala.Crush coconut and fennel seeds together (donot grind smoothly) on grinder, Put into the masala. Add washed rice and stir.Put cleaned Prawns. Finally pour 5 glass of hot water into the rice. Close the bowl with lid and keep the flame law. Wait until the water drains and rice cook. If this cooking in pressure cooker keep high flame for first whistle and keep law flame for second whistle . After that off the flame and keep aside to cool down the cooker. Donot open until the pressure of the cooker release completely. Here tasty Prawn Thenga Chor is ready. Ingredients for Prawn fry;. Prawn – 500 gm. Ginger – small piece. Garlic – 8/9 cloves. Onion – half of small Tomato – 1 small. Green chilly- 1 nos curry leaves. chilly powder - 2 or 3tablespoon Turmeric powder - 1 t spoon Salt. Method to cook;. Take a clean pan and keep it on law flame. Except prawn add all other ingredients into a mixer jar and grind all . Make it smooth as paste. Pour into a bowl. Add prawn and mix well. Pour some coconut oil into the hot pan .put each of the marinated prawn,and also add remaining masala in the bowl. Fry on law flame. Yummy fried prawn is ready. This is very tasty and best combination for all types of rice
