Delicious Sweet Rabdi...a Malai Sweet

Rabdi is also known as Basundi in some places. But they are different. The method of preparation and the texture are different. Scrape off the milk cream that sinks to the sides of the pan as the milk boils. However, in basundi the amount of milk is reduced by half with constant stirring. The texture of the two is also different. Basundi is smoother and thinner than Rabdi.

Milk - The main ingredient in a simple Rabdi recipe is milk.  Sugar – Sugar adds sweetness to this recipe.  Saffron Thread – Saffron Thread adds color and flavor to recipes. Saffron threads are soaked in a small amount of milk to create saffron-flavored milk.  Pistachios, Almonds - Add these dried he fruit to add richness to your dessert. Cardamom - Crush the cardamom pods  and add to this candy. This will give the prepared dish a pleasant aroma. Most  Indian desserts contain cardamom. Cornmeal - optional ingredient. This is used to thicken  milk faster in making rabdi kheer.

Let's see how to make Rabdi at home: Pour milk into a deep, heavy-bottomed pot and start boiling. 
When the cream forms on top of the milk, stir and mix it into the milk. Keep the heat low and  stir the milk in the pan occasionally (every 5 minutes). If the cream sticks to the sides, gently scrape  the sides and mix  with the milk in the pan. 
We need a deep-bottomed pot because we need to reduce the milk  to half of the original.

During the cooking process  you can do the following in parallel: 
Peel the pistachio shells. Boil pista and almonds in 1/2 cup water or microwave  for 4 minutes. Let  cool. Peel and slice the dried fruit when cool. You can also use pista and almond slivers if you prefer. Powder the sugar in a blender. Soak the saffron threads in 2 tablespoons of milk so that the saffron flavor permeates the milk. Separately, mix 2 tablespoons of milk with cornstarch.

I used cardamom pods, so I ground them with a mortar and pestle. Remember to stir the boiling milk every 4-5 minutes while  the other ingredients are ready. When the milk has reduced to about half, add the powdered sugar and mix. Pour the saffron  milk into the boiling milk. Add cardamom powder and chopped dried fruit. Add rosewater. Finally add the cornmeal mixed milk. Stir for another 10 minutes, keeping the milk from sticking to the bottom of the pan.
