1.CARDAMOM:Cardamom(elaichi) also known as queen of spices is one of the most expensive spices of the world ,just one kilogram of it can cost one dollar ninety in international markets . Lowest grade cardamom costs about 900 Indian rupees. Cardamom comes from small oval shaped fruits called pods, which contains several black seeds inside.. Gautemala, a central American country situated south of Mexico is the largest producer of cardamom in the world accounting for more than 55% followed by India. In India Kerala is the largest producer of small cardamom followed by Karnataka and Tamil Nadu .The reason for it's high price is that it requires a lot of hard work and grows in selected regions around the world, to do this job precisely harvesters train for six months under the supervision of experienced farmers. The harvesters train to differentiate between a ripe fruit and raw fruit. Each plant can bear a maximum of 10 ripe pods, these 10 pods produce only about 1.5 teaspoons of ground cardamom. 

2.SAFFRON:Saffron is the most expensive spice of the world. Saffron has varieties of uses, it is used as a spice, a dye, and a medicine. Iran is the largest producer of saffron in the world and accounts for  over 90% saffron production worldwide, followed by India which accounts for approximately 7% of world's total production.Though India is Second largest producer yet it's largest saffron producing state Jammu and Kashmir is famed for it's quality all over the world. Kashmiri saffron is the sweetest,most precious spice in the world. Producing saffron is labour intensive work, no machine can do the delicate work required to harvest these thin threads and it requires 40 hours of hard labor to produce just one kilogram of high quality saffron, that's why a real saffron can cost you over $10,000 per kilogram. 4,50,000 strands is required for a kilogram of saffron from about 1,50,000 flowers .One need over 150 flowers to make just one gram of saffron. Saffron is the red stigma of the crocus sativus, each crocus bears three small stigmas, and this requires careful picking by hand. Growing the plant isn't easy either, it requires more land than usual plant,weather also plays key role.There are four grades of saffron the Lowest grade being bunch, followed by pusha,negin and sargo in ascending order.
