Ingredients:
1 large cucumber (ideally an English cucumber).
 1 avocado,sliced
1 carrot, thinly sliced 
1 red capsicum, thinly sliced

Instructions:
1. Cut the cucumber lengthwise into thin, flat slices. Julienne the carrot and capsicum and slice the avocado.

3. Place the cucumber, avocado, carrots, and capsicum along the bottom border.
4. Using the sushi mat, roll tightly and seal with a small amount of water on the naked nori edge.
5. Cut into bite-sized pieces with a sharp knife, then serve with soy sauce, pickled ginger, and wasabi.
