How To Make The Famous Bombay Potatoes And About Potatoes

Bombay potatoes get their name from the UK and are a ‘videshi’ version of our classic Jerra Aloo.

Ingredients required;

4 large potatoes, 

1 onion, 

1/2tbsp cumin seeds,

½tbsp mustard seeds, 

1/4tbsp hing,                 

1/2tbsp coriander powder, 

1/4tbsp red chilli powder, 

1/4tbsp turmeric powder, 

1/4tbsp garam masala,     

1tbsp ginger garlic paste and salt.

 

The first is to parboil the potatoes. Don't boil the potatoes fully, as they will lose their shape and texture when cooked further. Once cooked about 60-70, switch off the flame.

Let the potatoes cool down a bit, peel them and them into medium-sized pieces.

In a pan, heat 2tbsp oil, Add hing, cumin seeds, and mustard seeds and let them splutter for a minute.

Add chopped onion and saute for just a minute or two. Add ginger garlic paste, mix and saute for another minute.

Now add all spices like coriander powder, red chilli powder, turmeric powder, and garam masala and as per taste roast the spices for a minute.

Add a splash of water along with the diced potatoes. Toss well and cook for about 6-8 minutes. Lastly, add a handful of coriander leaves as garnishing and switch off the flame.

Ready To be served;

Your Bombay potatoes are now ready to be served in pair with chapati and dal for a wholesome combo.

  1. Preheat your oven to 450°F
  2. Dry potatoes and poke every 4 times with a fork.
  3. Place potatoes on a foil-lined baking sheet and look until the skins are a little bit wrinkly about 25 minutes.
  4. Blush all over with olive oil and sprinkle with kosher salt, and place the potatoes back on the baking sheet with the opposite side up.
