Drumstick leaves or "moringa olifera," another name for moringa leaves, are incredibly nutritious and loaded with vital vitamins and minerals. These leaves are used in a variety of cuisines across many cultures because of their excellent flavour and beneficial properties. Making a fragrant and tasty curry is one well-liked way to consume moringa leaves. The following recipe for curry moringa leaves will tempt your taste buds and provide you a filling lunch.

Ingredients:

  • 2 cups fresh moringa leaves (washed and stems removed)
  • 1 onion (finely chopped)
  • 2 cloves of garlic (minced)
  • 1 teaspoon grated ginger
  • 2 green chilies (finely chopped)
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • ½ teaspoon red chili powder (adjust to taste)
  • Salt to taste
  • 2 tablespoons cooking oil

In a pan or kadhai, warm the oil over medium heat. Add the cumin and mustard seeds, then watch them splutter.

Add the chopped onions and cook them until transparent.

Add green chilies, ginger, and garlic that has been minced. Sauté for a minute to get rid of the raw garlic smell.

Salt, turmeric powder, coriander powder, red chilli powder, and the heat should be turned down to low. Mix carefully to thoroughly distribute the spices throughout the onion mixture.

Fresh moringa leaves should be added to the pan and stir-fried for a few minutes, or until they wilt and shrink in size.

For approximately 5-7 minutes on low heat, cover the pan and cook the leaves. The moisture in the leaves will evaporate as they cook.

Stir the mixture well after removing the lid from the pan. Check the seasoning and make any necessary adjustments.

Once the flavours are well-balanced and the leaves are soft, cook for an additional 2 to 3 minutes.

When the moringa leaves are cooked, turn off the heat and place them in a serving dish.

Hot steamed rice or Indian bread, such as roti or naan, should be served with the curry-flavored moringa leaves.

To change the flavour and texture of this dish, add extra veggies such diced tomatoes, potatoes, or carrots. For an additional fresh flavour boost, you can add freshly chopped coriander leaves as a garnish to the dish.
