Tukda means piece, and Shahi means royal. Shahi Tukda, also known as Shahi Tukra, is a dessert fit for a king or queen.
The bread slices for this Indian bread pudding are first dipped in flavored sugar syrup before being deep-fried in ghee. Slivered dry fruits and thick Rabdi are placed on top of these deep-fried bread pieces.
The cuisine of Hyderabad and Awadhi is highly renowned for Shahi Tukra. For celebrations like Eid, Holi, Diwali, and Ramadan (Iftar), this dessert is perfect.
Double Ka Meetha is the name of an alternate variation of this dessert. The only difference between it and Shahi Tukra is that it is baked after assembly.
Boil the milk, then stir in the maize flour and saffron soaked in three tablespoons of heated milk. Simmer the mixture until the milk reduces to a thick but pourable consistency. It's known as Rabri.
Finally, add the rose essence.
At this point, you can optionally add the chopped nuts.
Slice the bread diagonally after removing the brown sides.
I divided one piece into four, but two will also work
Fry the bread pieces until they are uniformly crisp and golden brown. Make use of a small, shallow pan to avoid using additional ghee or oil.
To achieve a crisp and golden brown color, deep-frying at low to medium heat is required; else, the food would turn out
Bring a small amount of water to a boil and completely submerge the sugar to create a thick syrup.
As you cook the bread pieces, soak them for a minute or so, or until you're ready to move on to the next batch.Place the drenched pieces onto a platter.
If you did not already do so in the preceding step, fry the chopped nuts in ghee and sprinkle them over the bread pieces. Over the prepared bread, pour the rabri. Serve warm or cold, as desired; myself, I prefer it cold! However, be sure to allow the bread to absorb the rabri for a while.

Half a cup cashews
¼ cup almonds, sliced
Two teaspoons of almonds
One and a half cups whole milk
Five tsp of evaporated milk
Half a cup of white sugar
One teaspoon of cardamom powder
One pinch of saffron
