Potol Er Dolma - A Bengali Vegetarian Dish

Being a true non vegetarian at heart, I get a bit upset when its Monday since we eat pure vegetarian food at Monday.

There must be so many like me who doesn't like to eat vegetarian food that much. For all those here is a delicious mouth watering vegetarian recepe - potoler dolma.

Potol is basically pointed gourd in English or as we all know parwal in hindi . Potoler Dolma is an authentic bengali vegetarian cuisine. We begalis love this dish. I am sure you will also love the recepe .

 INGREDIENTS:-

  • Large sized pointed gourd or parwal - 4 to 5
  • Potato ( medium size) - 2.
  • Ginger - 1 inch.
  • Peanuts
  • Salt to taste
  • Chopped green chillies - 4 to 5
  • Turmeric -½ teaspoon
  • Coriander powder - ½ teaspoon
  • Cumin powder - ½ teaspoon
  • Asafoetida - a pinch

METHOD :-

Remove the outer scale of the parwal with a knife or peeler. Cut off about 5 cm pieces from both ends of the parwal. Keep the cut portion for later use.

Using a spoon's handle remove the seeds from the parwal and clear the inside to make hollow space within.

Now take the potatoes, boil them and mash them into a smooth bharta. Heat oil in a pan.Add a pinch of asafoetida or hing in the oil. Add the mashed potatoes in the hot oil.

Add chopped green chillies, turmeric powder, cumin and corainder powder, and salt as per taste. Saute them properly. Once all the ingredients get mixed up properly, take it off the flame and transfer to a bowl.

Now take the pan, heat it and dry roast the Peanuts in the pan for 2-3 minutes. Remove from the pan. Then add the Peanuts to the fried mashed potatoes.

Take the hollow parwals and insert the mashed potatoes and peanut mixture in it. Put the cut ends of the parwals which we kept previously on both ends of the parwal. Fix the ends using clean toothpicks or any other properly washed sticks.

Now in a deep bottom kadhai heat generous amount of oil required for deep frying. When the oil gets heated drop the parwals one by one into the hot oil for deep frying. Keep the flame on medium. Once the parwals are fried from all sides take them out of kadhai. Potol er dolma is ready.

U can have it with rice and dal. Or you can make any gravy of your own and drop the dolmas in it. Enjoy with steamed rice or roti.
