"Phodshi" - A Rare And Less Known Monsoon Vegetable

When I was something 10 or 12 years old, my dad brought a grass-like vegetable and handed it to my mom, during monsoon. So I asked my dad why did he bring grass and asked if we gonna eat grass from now. It was a funny moment because I was small. He mentioned that it's not grass it's called Phodshi and is only available during the rains. It is also called Devkrupa bhaji because it doesn't need to cultivate. It grows on its own during the monsoon season every year. Mulshi, Kuli, Peva are its other names. 

Phodshi plant is a source of Proteins, Minerals, Carbohydrates, etc. This plant is about one foot in height and is dark green with a white base. The white part needs to be discarded and it should be washed thoroughly while consuming. As it is a natural plant it has an earthy flavor. 

You can make a Dry vegetable or a Bhaji which means a small piece mixed in some batter and fried like onion bhaji. If you asked me it tastes better as Bhaji. But it's very tasty and you should try it once. I'm mentioning the recipe of Bhaji below.

For Bhaji -

Ingredients 

  1. Bunch of Phodshi
  2. Onion
  3. Ginger - Garlic Paste
  4. Besan
  5. rice flour
  6. Coriander
  7. Tamarind
  8. Jaggery 
  9. Salt
  10. Red chili Powder
  11. Turmeric Powder 
  12. Water
  13. Oil

Method -

  1. Take a bunch of Phodshi, discard its white base, and wash it thoroughly twice or thrice. (All the mud should be removed.)
  2. Cut it in small pieces not too long not too short. Cut onions as well. (Take as per your wish, but it should be fewer than Phodshi). Place both in a mixing bowl.
  3. Add 1 tbsp of ginger garlic paste, 2tbsp of rice flour, some jaggery, tamarind.
  4. Add red chili powder as per your taste (I add only 1 tbsp but if you want it to be spicy feel free to add 2 tbsp), 1 tbsp of turmeric powder, salt as per taste. 
  5. Don't forget to add some coriander leaves to it as it gives a taste to it.
  6. Add some besan powder and add water. Don't add too much water as we want the batter to be thick. So be careful with that. And mix it well
  7. Heat oil in a utensil, don't overheat it, or else it will burn.  
  8. Put small pieces in the oil with your hand. Deep fry it. 
  9. After 5 minutes removed it from the oil and it's ready to Eat.

It very well goes with Tomato Sauce. Try it and let me know if you like it or not.
