Mesu- this is mainly prepared in the Himalayan region especially Assam and Sikkim area. This is made of fermented bamboo shoots. Main ingredients of mesu are bamboo shoots, spices, and other vegetables. And this is made by the fermentation process.
Gundruk- this is made by fermentation of rayo saag leaves, mustard or cauliflower leaves.
Natto- it is traditional Japanese food that is made of fermented natto soybean.
