What is Dorayaki?
The mention of dorayaki is always associated with Doraemon. At least for me. How many of you grew up with the Doraemon show? I certainly can't be the only one, can I? I love watching the blue cat come from the 22nd century to help this boy Nobita! I wish I was like Nobita. I still want to be him and have a robotic cat that can fulfill my wish. This magic bag can spawn anything he needs. Doraemon's favorite food is this dorayaki. Dorayaki is basically a Japanese snack with sweet red bean paste (anko) sandwiched between two fluffy pancakes.
Ingredients
1. Baking Flour
I have tried using all-purpose flour before and my family voted for the sponge cake because of its softer and smoother texture
2. Baking Soda
Baking soda not only creates brightness but also helps brown cakes. I don't recommend switching to baking powder (and please note that baking soda and baking powder are not a 1:1 substitute)
3. Sugar
I use granulated sugar. Sugar also promotes caramelization and browns
4. Salt
A small pinch of salt balances out the overall flavor
5. Honey
Honey adds that wonderful flavor and I highly recommend not to skip it
6. Milk
I use low fat milk. You can also use non-dairy milk, preferably unsweetened
7. Eggs
Eggs enrich and soften the pancakes
