Whole Roasted Cauliflower With Creamy Smooth Thick Gravy.
This cauliflower recipe from NORTH INDIAN CUISINE. And name of the dish is GOBI MUSSALLAM. In this dish one whole marinated cauliflower roasted in oven and dressing with delicious mughlai creamy, smooth, buttery makhni gravy.
INGREDIENTS
- 1 Whole Cauliflower
- Whole garam masala ( Cinnamon, Cardamom, Cloves, Bayleaf. Starknise )
- 150 ml of Sunflower oil.
- 2 tbsp of Ginger Garlic Paste.
- 500 gm of Bowl Tomato
- 100 gm of Cashewnut
- 8 piece of Whole kashmiri chilly.
- 2 big of Onion
- 2 tbsp of Kashmiri chilly powder
- ¼ tbsp of Turmeric powder
- ½ tbsp of Cummin powder
- ½ tbsp of Garam masala powder
- ½ tbsp of Dry kasuri methi ( crushed )
- Salt to taste
- 1 tbsp of Sugar
- 50 gm of Butter
- 100 gm of Fresh cream
- Coriander leaves for garnish.
FOR GOBI MARINATION
- 1 tbsp of Ginger garlic paste
- Salt to taste
- 2 tbsp of Kashmiri chilly pwd
- ½ tbsp of Turmeric pwd
- ½ tbsp of Coriander pwd
- ⅓tbsp of Cummin pwd
- ½ tbsp of Kasuri methi ( crushed )
- 1 tsp of Black salt
- 1 tsp of Chaat masala
- 2 nos of Lemon juice
- 50 gns. Of Mustard oil
- 100 gm of Hung curd
METHOD
- Blanched the cauliflower. Keep aside.
- To Make marination of gobi, put all ingredients in a bowl and mix together as well.
- Then put marination on gobi. Roast gobi in oven. ( in 200 •C for 20min )
- After roast gobi, keep aside.
- Take handi, put bowl tomato, onion, cashewnut, and whole k chilly add some water and boiled nicely untill tomato got tender.
- Then stain in a colander , and water keep in a bowl.
- Make a smooth paste of this boiled things. Keep aside
- Then take a pan put some oil, add whole garam masala, wait for getting garam masala frangnant.
- Then add ginger garlic paste. Also add some water. Saute it for 5 mins. Then add spices ( salt, k chilly p, T P, C P and K M ). Saut it, and cook till raw flavour is gone.
- Then add maked tomato paste. Saut it.
- Cooked in slow flame till oil goes separate from gravy. And keep stiring for gravy not brunt.
- After that add some water. Cooked well.
- Then add sugar and butter.
- At last add fresh cream mix well and off the gas flame.
- Gravy is ready.
- Take a serving bowl. Put cauliflower in center, and pour the gravy on it.
- Garnish with coriander leaves. Serve hot.
- Serve with indian bread, porattas.etc….
