Today topic is soup, this soup which is came in my mind nfrom waldrof salad , then i tried, Really i liked it , thats why i am here to share with you guys.
The waldorf salad, originally a basic apple-celery-mayo combo, was presented on Walk 14, 1893, at a cause ball respecting St. Mary's medical for Kids. Its presentation agreed with that of the Waldorf lodging, which opened the earlier day.
We've combined the flavors from the exemplary waldorf salad and transformed them into a rich, gritty soup that is great for mid-winter eating.
LETS START RECIPE
INGREDIENTS
Stripped - 2 nos of medium-sized apples,
1 no of finely onion chopped
1 tbsp of Olive oil
2 nos of celery stick
1 no of laurel leaf
As per taste ocean salt
1 tsp of dark pepper powder
1 cup of vegetable stock
40 gms of walnuts parts
3 tbsp of cooking fresh cream
1 tsp of agar agar powder
1 tbsp stirred new cream - 1 tbsp
SOUP
Remove the center of the apples and slash generally. Finely slash one celery stick and keep to the side.
Warm a pan over low intensity. Heat a spoon of oil, add chopped onion and laurel leaf and saute till onion transperant.
Add apples and chopped celery to the dish and sauté for an additional 5 minutes on medium intensity.
Add the vegetable stock and preparing. Blend well. Cover and heat to the point of boiling. Cook for 15 mins till the ingredients getting soft.
When the soup is very well cooked, remove the leaf (laurel leaf) and blend it make puree until smooth.
Strain the soup through fine sifter and blend in a spoon of cream. adjust seasoning as per your taste.
WALNUT DUST
In another container, toast nuts over medium intensity. Guarantee that container is shaken well during the cycle of cooking time to prevent bruing nuts. kepp aside the nuts allow to cool.
When chilled off, grind the nuts to a fine powder and strain in a fine stainer to get ready nuts dust.
CREAMY CELERY CAVIAR
Mince the subsequent celery stick and pass it through a sifter. In a pan, add this minced celery, the excess cream, salt, powder of agar agar and heat to the point of boiling.
Once finished, pour the combination through a dropper into chilled oil.
Utilizing a spoon, delicately eliminate the newly made celery cream caviar and wash the pearls under running water.
PLATTING AND ARRANGING SOUP
Pipe a few drops of the whipped cream into a soup bowl. Combine the apple slices with the droplets.

Present with the hot soup.
