Ingredients
12 yellow 6-inch corn tortillas
frying with vegetable oil
for use as a garnish, kosher salt
Instructions
Stack the tortillas, then cut each stack into six equal wedges.
In a 6- to 8-quart Dutch oven, heat 112 inches of oil until a deep-fry thermometer reads 350 °F. Add the tortillas in three or four batches, stirring them occasionally to keep them in the oil. Cook till slightly brown and crispy after approximately a minute. 
Remove with a slotted spoon or a spider to a sheet tray lined with paper towels. Kosher salt should be promptly sprinkled. (The chips' coloration will keep getting more golden as it cool.

Onion Rings,🧅🧅

PREP TIME: 10 minutes
TIME TOTAL: 1 hour 30 minutes
Ingredients
2 big, peeled yellow onions
a quart of buttermilk
All-purpose flour, 2 cups
Kosher salt, 3 1/2 teaspoons + additional for dusting
Baking powder, 1 1/4 teaspoons
1/4 teaspoon of black pepper
Cayenne pepper, 3/4 teaspoon
frying with canola oil
serving ranch dressing
Directions

1 Slice the onion crosswise into 1/2-inch-thick rounds. Separate the pieces into rings and place in a 9x13-inch baking dish. Pour buttermilk evenly over the onions and toss gently to coat. Cover and chill for at least 1 hour or up to overnight.In a large bowl, whisk together the flour, salt, baking powder, black pepper, and cayenne pepper. Set aside.

In a large Dutch oven, heat 2 inches of oil over medium to 375°F. Working in batches, remove onion rings from buttermilk, allowing excess to drip off. Add to the flour mixture and toss well to coat, shaking off excess. Fry onion rings, stirring occasionally, until golden brown and crisp, 2 to 3 minutes. Using a slotted spoon, transfer onion rings to a paper towel-lined baking sheet. Sprinkle onion rings with additional salt to taste. Serve hot with ranch dressing, if you like baking sheet lined with towels. Onion rings should be salted more, to taste. If desired, serve hot with ranch dressing. 
The finest way to serve onion rings is right from the fryer. If necessary, keep them warm in a 200°F oven as you finish the remaining batches.
