And Yet Another Recipe With My Favorite Ingredient "Chocolate"..

Here's another recipe that I tried out that I absolutely loved. Again chocolate is my weakness and I cannot keep my hands off of anything with chocolate in it. I made this for my cousin's birthday dinner and she too loved it and kept ordering other things from me during the lockdown days.. I enjoy baking and cooking with little music on the side and if I am alone that even better as I enjoy the dancing in the kitchen routine.. Silly I know but that's my guilty pleasure. So without any further chit chat here is the recipe..

I am going to explain the procedure with the ingredients in it so its easier during the process.

Take 2 cups of sugar in a bowl. Sieve 2 ½ cups of all purpose flour and 1 cup of cocoa powder. Add in 2 teaspoon baking powder and 2 teaspoon baking soda, 1 ½ teaspoon of salt and sieve it all in and mix it well. Add in 3 eggs into the bowl, 1 ½ cup of milk, ½ cup of vegetable oil, 2 teaspoon vanilla extract and blend it well. Add in hot water slowly incase the thickness is extra. The consistency should be not too thick yet not that runny as well. 

Take two baking pans and line it with parchment paper or baking paper. Pour the mixture into both the pans evenly and bang the pans on the kitchen counter to remove the air bubbles.

Pre heat the oven for about 10 minutes. Bake both the pans for about 20-25 minutes. You can check if its done by putting in a toothpick and if it comes out clean, take the pans out and let it cool. Cut both the cakes in half vertically, and trim the edges so that you have four sheets of cake now.

Now for the Chocolate Mousse.

Heat about 2 cups of cream. Do not heat it directly. Heat a pan of water and place it on top. Add about 500gms of bar chocolate and melt it completely. This mixture is called chocolate ganache. Set aside 1 cup of chocolate ganache for topping later. Take 2 cups of whipping cream and beat till until soft peaks arise. Add the rest of the ganache in small batches into the whipping cream. 

And now for the assembling part.

Place 1 sheet of cake and pour the mousse by using a pipe and blend it all over the sheet of cake. Place the second sheet on top and repeat the same process until all the sheet are over. On the final sheet or the top of the cake pour the topping ganache which was set aside. Chill in the fridge for 20 minutes and later cut up a slice and serve. You can add in roasted almonds on the top or design the cake using the mousee.. Do try it out and let me know your comments below..
