India is renowned for its extensive and varied culinary traditions, but one of its most well-known dishes is relished there. There are around  different varieties of biryani in India, with variations found in almost every area.


The most well-known non-vegetarian dish from the renowned Hyderabadi cuisine is probably Hyderabadi Biryani. A variety of unique spices, basmati rice, and goat meat are used to prepare this traditional meal.


Hyderabadi Biryani, one of India's most well-known biryani dishes, is thought to have originated in the Nizams' kitchens. Basmati rice, spices, and several kinds of meat are used to make it. Hyderabadi biryani comes in many different varieties, but one of the most well-known is the dum biryani.

A particular variety of biryani from the Vellore region of Tamil Nadu is called Ambur (or Vaniyambadi) biryani. With dried chilli paste and whole spices, the meat is combined with cooked seeraga samba rice after being marinated in yoghurt. Ennai kathirikai, a brinjal curry, is frequently served with it.

Chettinad biryani is a dish from the infamously hot Chettinad cuisine of Tamil Nadu. It is prepared with flavorful seeraga samba rice, coconut milk, cashew nuts, chicken, herbs, and spices. Additionally, nenju elumbu kuzhambu, a spicy and tangy gravy made from goat meat, is frequently served with it unique.

Dining room fare
The well-known Thalapakatti biryani, also known as Dindigul Biryani, originates from the Tamil Nadu town of Dindigul. It is prepared similarly to Chettinad biryani using regional seeraga samba rice, cube-sized chunks of mutton or chicken, yoghurt, pepper, and lemon juice, which give it a very strong and acidic flavour.

Calcutta Biriyani 
When Lucknow's final Nawab, Wajid Ali Shah, was exiled to the city in 1856, the Calcutta or Kolkata style of biryani evolved from the Awadhi style. The meat is marinated with nutmeg, cinnamon, mace, cloves, and cardamom then layered with soft cooked eggs and potatoes to make a light and airy dish. The rice is scented with rose water and saffron to give it a yellowish hue.

Bollywood Biryani
Bombay biryani, a moderate but delectable dish, is available in Mumbai. In addition to fried and seasoned potatoes, it is typically cooked with chicken or mutton. The addition of kewra water and dried plums, which give the rice dish its distinctly sweet and tart flavour, makes it special.
