It is unique about pasta that it is available in so many shapes, sizes, and colors. The size, shape, and color are all up to you.

In cooking, pasta is typically made from an unleavened dough of wheat flour mixed with water or eggs, formed into sheets or other shapes, and then boiled or baked. To improve taste and texture, or as a gluten-free option, rice flour or legumes such as beans or lentils can be substituted for wheat flour. Italian cuisine is dominated by pasta.

It is possible to divide pasta into two broad categories: dried pasta (pasta secca) and fresh pasta (pasta fresca). Extrusion is the most common method of commercially producing dried pasta, although it can be made at home as well. A simple machine is sometimes used to produce fresh pasta, as it is traditionally made by hand. Fresh pastas available in grocery stores are produced commercially by large-scale machines.

Fresh and dried pasta come in a variety of shapes and varieties, with over 1,300 documented names for 310 specific forms. It is common for pasta shapes and types to differ by region in Italy. The pasta form cavatelli, for instance, has 28 different names depending on the region and town. The most common types of pasta are long and short shapes, tubes, flat shapes or sheets, miniature shapes for soup, filled or stuffed shapes, and specialty shapes.

History of National Pasta Day

The first pasta was made in Palermo in the 5th century. A pasta factory was established in Venice in 1740.

Pasta was brought to Europe by the early Spanish settlers, but was not popular until Thomas Jefferson visited Paris. The American palate became accustomed to pasta when a large group of Italian immigrants immigrated from Italy to America a few years later.
