INGREDIENTS OF CHICKEN BIRYANI

.1 cup boiled basmati rice
.600 grams chicken
.1/2 teaspoon mint leaves
.1 tablespoon garam masala powder
.salt as required
.1 teaspoon saffron
.2 tablespoon refined oil
.1 tablespoon bay leaf
.3 green cardamom
.1 black cardamom
.2 clove
.1 teaspoon cumin seeds
.2 onion
.4 green chillies
.1 teaspoon turmeric
.1 tablespoon ginger paste
.1 tablespoon garlic paste
.1 teaspoon red chilli powder
.1 cup hung curd
.1/2 tablespoon ginger
.2 tablespoon coriander leaves
.2 drops kewra
.water as required
.1 tablespoon rose water
.1 tablespoon ghee
Step 1
In a large pan, fry a tablespoon of oil (or ghee) until golden brown. Add 2 more tablespoons of oil to the pan, stir in the garlic and ginger until the onion is soft and golden. Add pepper, black pepper, turmeric, cumin, salt and tomatoes. Add the fry, stirring constantly for 5 minutes. Add yogurt, mint, cardamom and cinnamon sticks. Cook over medium heat, stirring occasionally, until cooked with the tomatoes. When the mixture becomes too dry and starts to stick to the pan you need to add a little hot water.
Step 2
Once the mixture is thick and smooth, add the chicken pieces and stir well with the spice mixture. Boil the chicken for about 35 to 45 minutes.

Wash the rice well and let it cook for at least 30 minutes.

Heat oil (or ghee) in a large pan and fry until onions are golden brown. Add saffron, cardamom, cloves, cinnamon sticks, ginger and rice. Stir constantly until the rice is seasoned.

In a medium saucepan, heat the chicken broth and salt. When the mixture is hot, stir well over the rice. Add the chicken mixture and potatoes; Gently mix these with rice. Bring to a boil.
