How to make paneer at home with easy steps-
1.take 1 to 2 litre of creamy milk and Start boiling it on medium flame
2.keep your acid ingredients such as yogurt, vinegar, lemon juice.please use only one from them , when the milk is booked turn off the flame and add 2 to 3 table spoon of vinegar or lemon juice in it. Give a good stir for 2 to 3 minutes
3. Milk begins to curdle immediately and solids separate from the whey. If it doesn't , then turn on the flame continue to boil till you see the solids separate completely . If needed you may add another teaspoon of vinegar or lemon juice
4. Turn off the stove as soon as you see the milk has curdled completely. When the paneer is done correctly you will see the whey being clear and not Milky. The colour of the whey will be yellowish or green but not Milky white. It is important u turn off the gas when it is done . If you continue to cook , it becomes harder and greeny
5.place a colander over a bowl . Layer it with a clean cheese cloth . A thin new handkerkchief works well too . Transfer all of the curdled milk to the colander.
Immediately pour cooled water in it to get rid of vinegar smell . Later rinse the paneer well a few times under running water to clear it's vinegar.
7.squeeze off the excess water. Make a knot for 30 minutes this help to drain the excess whey . Paneer should be moist after draining
8. After a it place it in bowl and put 2 to 3 kg weight on it and remove it after 2 to 3 hours
9. After that remove the knot and you will see the round paneer block
