Appam, usually eaten for breakfast or dinner, is the most popular in Tamil Nadu, Sri Lanka, and Kerala, and is culturally associated with a Syrian Christian called Nasranis, who bake appam on stone. According to American food writer and historian Gil Marks, pancakes first appeared on the southern tip of India. Little is known about the history of Appam, but some speculate that it comes from the Jewish community of India. Today, hot spices such as coconut milk curry are traditionally served.
