Sweet Sour And Spicy Recipe - Mango

Hello Everyone,

In this Blog we will see some Sweet, Sour and Spicy Recipes using Mango. In my previous Blog I shared about mangoes and its uses. Now we can see how to use Mangoes in Recipes.

Mango Sweet Pachadi: We are going to make the sweet, sour and spicy and tasty Mango Pachadi.

Ingredients:

1.    Mango – 2 nos.

2.    Red Chili Powder – 1 tablespoon

3.    Jaggery – 3 tablespoon

4.    Salt – as Required

5.    Water – 20 ml (Approx.)

For Seasoning:

1.    Sesame Oil – 25 ml

2.    Mustard seeds – 1 teaspoon

3.    Split Urad dal – ½ teaspoon

4.    Fenugreek – ½ teaspoon

5.    Asafoetida (Hing) – 3 Pinches

6.    Curry Leaves – a spring

Preparation Method:

1.    First heat a pan and add Sesame oil, after that add all the seasoning ingredients as I mentioned the above Seasoning Ingredients one by one.

2.    After frying those all the seasonings then add cut mangoes. We can add half portion peeled Mango and another half portion with skin. It can be cut like cubes.

3.    Sauté for 5 minutes after that add salt and red chili powder and sauté another 2 minutes.

4.    Then add some water and let it cook until mangoes become soft.

5.    After that add jaggery and cook for another 5 minutes or until jaggery melts and combines with Mango.

Note: The same method can be followed to prepare spicy mango pickle. We should skip the jaggery and mangoes can be cut into small pieces for spicy Pickle.

Mango Ice Cream: Everyone loves Mango ice cream. This summer we can easily prepare this at our home with simple ingredients.

Required items:

1.    Mango puree – 250 ml (grind some mango pulps without skin)

2.    Custard powder – 50 gm

3.    Milk – 500 ml (Full cream milk)

4.    Sugar – 250 gm

5.    Fresh Full cream – 200 ml

6.    Vanilla essence – 1 cap

Preparation Method:

1.    Add milk into a saucepan and bring to boil.

2.    After that add sugar and custard powder and mix gently without any lumps.

3.    Five minutes later, switch off the flame and bring this mixture to completely cool down.

4.    Take a blender then add fresh full cream and vanilla essence blend smoothly then add milk mixture and mango puree. Blend well until all the mixture combines well.

5.    After blending, pour the liquid into the freezer safe box and freeze it overnight.

6.    The next morning, take that ice cream from the freezer. Then blend again smoothly and freeze again overnight. This step will give us the creamy ice-cream without crystal ice.

7.    The next day the Mango ice-cream is ready to serve and eat. We can add a few chopped mango chunks as toppings.
