Friends, today I am going to tell you semolina kachori and that too without oil you must be thinking that how can kachori be made without oil. But today we will make it without oil in a very healthy way.

ingredients for suji kachori recipe semolina = one cup

Ajwain = one teaspoon

salt = as per taste

oil = one teaspoon

for staffing

 Potato = four boiled Rai = half tsp

Cumin = half tsp

Curry leaves = eight to ten Asafoetida = 1/4 tsp

Ginger paste = 1 tsp

Onion = 2 medium sized, 

cut into slices Boiled peas = cup Turmeric powder = 1/3 teaspoon Red chili = half a teaspoon

salt = as per taste

Amchur powder = 1 tsp

Garam masala powder = half tsp Oil = 1 tbsp

how to make suji kachori First of all, we will make the stuffing for the kachori, put the pan on the gas and put a big spoon of oil in it. If you want, you can also use ghee in it. When the oil is hot, turn the gas to medium. Now add mustard, cumin, 8 to 10 curry leaves, asafoetida and ginger paste and stir for one to two minutes so that the rawness of ginger goes away.

Now add chopped onion in it and stir till it becomes soft. (If you do not eat onions, do not add) When the onion becomes slightly soft, then add boiled peas to it. Also add turmeric powder, red chili powder, garam masala powder, salt as per taste and a small spoon of mango powder and fry the spices while stirring. If you do not have amchur powder, then you can also add chaat masala or lemon juice to it, it will give tanginess to the staffing.

When the masala is fried well, then add mashed potatoes to it and mix the potatoes well in the spices

If you do not have peas, you can use carrots, capsicum or even cauliflower in its place. Now our stuffing is ready, turn off the gas and take it out in a bowl and keep it to cool down. In another pan, add two glasses of water, salt as per taste, a small spoon of carom seeds and a tablespoon of oil and mix it. Let it come to a boil on high flame, when the water starts boiling, add a cup of fine semolina to it. You have to take semolina from the same cup or bowl from which you will take water.I have added fine rava here if you have thick semolina. So you grind it in a mixer and use it. When the semolina absorbs all the water well, then turn off the gas and let the semolina cool down in a bowl. When it cools down enough that you can touch it easily, take a little oil in your hands and start kneading it. Knead this dough for one to two minutes to make it smooth

Break a little dough from the prepared dough and make a dough and spread it in the hands. Put a spoon of the staffing in the center and fold it well from all the four sides. If you feel that staffing is coming out from anywhere, then put some flour on it, its staffing should not come out from anywhere. Now our kachori is ready, prepare all the kachoris in the same way.

Put two glasses of water in a pan and cover it on high flame and let it boil. So much water is coming to a boil, grease the steamer plate with oil. Then put the kachori on top of it, when the water starts boiling, place the steamer plate containing the kachori on top of the pan. Clean the water that is on the lid which was placed on top of it. Cover the lid with a cotton cloth and place it on the steamer plate. So that whatever steam it will make, that water does not fall on the kachori.

Steam it for 15 minutes on medium flame. Switch off the gas after the stipulated time, now our kachoris are ready. Take out the plate and let it cool down, now our very tasty and healthy steamed semolina kachori is ready.
