Foodborne illness is any illness resulting from the spoilage of contaminated food, pathogenic bacteria, viruses, or parasites that contaminate food and toxin such as aflatoxin in peanuts, poisonous mushrooms, and various species of beans that have not been boiled for at least 10 minutes.
Major foodborne illnesses and causes
Bacteria:
Salmonella- this present mainly in eggs, poultry, and other animal origin products
Campylobacter- this mainly caused by raw milk, raw or uncooked poultry, and drinking water.
Enterohaemorrhagic Escherichia coli- this is mainly associated with unpasteurized milk, undercooked meat, and fresh fruits & vegetables.
these pathogen symptoms are fever, headache, nausea, vomiting, abdominal pain, and diarrhea.
Listeria- Infection leads to miscarriage i pregnent women or death of newborne baby. Listeria is found in unpasturized dairy products and various ready to eat foods and can grow at refrigeration temp.
Vibrio cholerae- It infects people through contaminated water or food. Symptoms like abdominal pain, vomiting, and profuse watery diarrhoea.
Antimicrobials, such as antibiotics, are essential to treat infections caused by bacteria.
Viruses
Norovirus infections are characterized by nausea, explosive vomiting, watery diarrhoea. Hepatitis A virus can cause long lasting liver diseases and spread through raw and undercooked seafood or contaminated raw produce.
Prasites
Some parsities such as fish-borne trematodes, are only transmitted through food. Parasites such as ascaria, giardia enter the food chain through water or soil.
Chemicals
Naturally occurring toxins includes mycotoxins, marine biotoxims, cyanogenic glycosides and toxin occur in posionous.
Heavy metals like lead, cadmium and murcary cause neurological and kidney damage.
