Rasogolla - An Indian Cottage Cheese

Rasogolla also known as Rasgulla, is a south asian syrupy delicacy popular in India. it's created with chhana (an indian cottage cheese) and semolina dough balls that are baked in a light sugar syrup. A lifeline of Bengali is Rasogolla. You can find rasogolla in every sweet shop of bengal. If you like to make the popular sweet dish you definitely try this at home. You have to follow some steps for this ultimate delicacy. 

Let's see about the Rasogolla making process:

Ingredients:

  1. Milk-2litr🥛
  2. lemon juice/vinegar🍋
  3. sugar

At first with 2 litres of milk and 1 lemon, Chhana need to be prepared. So,  boil milk in a pan for 4/5 minutes in a medium flame after that squeeze the lemon into the boiling milk for chhana. Then switch off the flame.  Drain the water well from the chhana and mix a half teaspoon of semolina in the chhana. Then you have to mix well. Mixing is the one of the important point in making rasogolla. Stir until the chhana sticks to the hand so that the whole mixture blend well. Then you have to make a round ball with that mixture so  that the chhana do not get sticky in the hands while making the ball. After preparing the chhana balls keep it aside.

Then boil two cups of sugar in a little less than three cups of water to make the sugar syrup. You have to watch it carefully. Don't make it to sticky.After that in a boiling syrup water the chhana balls should be released and  When the syrup is ready, reduce the heat a little. The balls will go down at first, but if they float after a while, they will  have to be submerged again. After doing this way two or three times, when the rasogolla stops growing, it is ready .we have to finish making the rasogolla. And now you can serve it hot or you can have it later. 

You can also make baked Rasogolla after making Rasogolla.It is also one of the popular desert in kolkata and tastes amazing. You can try it at home. It is very easy to make but you have to follow the techniques or the steps carefully.
