GALOUTI KEBAB IS NON-VEG KEBAB. THIS KEBAB INVENTED IN CITY OF NAWAB. AND YOU GUYS KNOW THE CITY OF NAWAB IS LUCKNOW. THERE NAWAB'S LOVE TO EAT DIFFERENT TYPE OF KEBAB. IN LUCKNOW HAVE SO MANY DELICIOUS DISHES.TODAY I AM GOING TELL A RECIPE OF KEBAB FROM LUCKNOWI CUISINE.

“Galouti means melt in the mouth, these kebab were created for an aging toothless nawab”

Galouti kebab recipe it is said that during the first time create the kebab over 150 spices using for create this galouti delicious kebab. In this delecated kebab we are used some host different ground spices to recreate the magic of authentic awadhi feeling. The minced meat is marinated with ground spices, roasted gram flour, egg and green chilly. And shallow fried in ghee. Served with piece of lime and coriander leaf. And it is best enjoyed with mint chutney.

INGREDIENTS

  • Meat (Beef / Mutton ) ½ kg.
  • Raw pappaya 100 gm.
  • Ginger chopped 1 tbsp.
  • Garlic chopped 1 tbsp.
  • Poppy seeds roasted and ground.
  • Seeds of two cardamoms.
  • Pepper corns 8nos.
  • Cinnamon 1 stick.
  • Kashmiri Chilly powder 1 tbsp.
  • Grated nut mug ¼ tbsp.
  • Crispy fried brown onion 10 gm.
  • Chopped coriander leaves 100 gm.
  • Chopped onion 10 gm.
  • Roasted gram flour 3 tbsp.
  • Egg 1 No.
  • Salt to taste.
  • Ghee for fry the kebab.

METHOD

  • Mince the meat nicely.
  • Raw pappaya put in a blender and paste it nicely.
  • Poppy seed, cardamom, pepper corn, cinnamon, raw pappaya, kashmiri chilly powder, grated nutmug, and crispy fried brown onion mix with the meat and minced nicely.
  • Then add chopped ginger, chopped garlic, chopped onion, chopped coriander leaves, salt, rosted gram flour, and egg. Mix with your palm make smooth dough.
  • Keep aside for 4 hrs.
  • Put some ghee in your hand, Then Make patties as your desired size.
  • Keep it for 30 min in fridger.
  • Take it out from fridger.
  • Put some ghee in a pan then add patties in it.
  • Shallow fry the kebab till kebab both side turn into golden color.
  • Take it out from pan and arrange in a serving dish.
  • Sprinkle with lemon juice, and garnish with coriander leaves.
  • You can choose your chutney, you can make mint chutney or garlic sauce.
  • Serve hot with tandoori roti and chappati.

This kebab is very smooth and soft. One of the delicious and mouth melting kebab.
