ACTUAL NAME IS MURGH GILAFI KEBAB, GILAFI MEANS COVER.
Chicken mince mix with verity type of aromatic spices and nuts. Cover with colorful chopped vegitable and tang with lime, along with kewra water. Baked or grilled in a tandoor or oven to get perfection.
INGREDIENTS
Chicken five hundread gram.
Brown onion paste half cup.
Ginger chopped one tbsp.
Garlic chopped one tbsp.
Kashmiri Red chilly powder one tbsp.
Garam masala powder one tsp.
Cummin powder one tsp.
Lemon juice three tsp.
Almond chopped one tbsp.
Cashewnut chopped one tbsp.
Coriander leaves nicely chopped half cup.
Finely chopped green chilly three to four.
Roasted gram flour two tbsp.
Egg one.
Cream cheese.
Onion one.
Tomato one.
Capsicum one.
Ghee for basting.
Salt to taste.
Chaat masala.
Kewra water.
Skewers.
METHOD
Minced the chicken.
Ginger and garlic chop finely.
Also almond and cashewnut chop finely.
Chop the onion finely.
deseeded the tomato and chop finely.
Also chop the capsicum finely.
And put in a bowl chopped onion, chopped tomato and chopped capsicum, mix well. Keep aside.
Minced chicken put in a big bowl.
Then add all ingredients except almond, cashew and coriander.
Put some ghee and mix well with hand for smooth mixture.
Then add chopped almond, chopped cashewnut and chopped coriander leaves. Mix well.
Mixture keep aside for half an hour.
Then take some mixture and make a ball. And p
Skewer the mixture in skewers. And spread the mixture.
Then sprinkle chop onion, chop tomato and chop capsicum on chicken mixture, after that press the mixture on skewers.
Then put in griller or tandoor.
After waiting for cook till kebab get into a golden color.
After that take it out, bast the ghee and sprinkle chaat masala, then put it tandoor or griller for 10 sec.
Then take it out.
Arrange in a serving plate with mint chutney.
Accompaniment is onion lachha salad.
Serve hot with tandoor roti ot chappati.
