As this is the first post in our blog , lets start from the basics . While looking on frosted cakes , we can find that on most of them the base is a vanilla sponge . A vanilla sponge recipe is so easy to convert into different flavoured cakes by adding some flavourings . So today let's start from the basic vanilla sponge recipe.
Ingredients you will need:
All purpose flour: 1 cup
Baking powder : 1 teaspoon
Baking soda : 1/2 teaspoon
Milk powder : 2 tablespoon
Cornflour (optional) :2 tablespoon
egg : 4
Powdered sugar : 1 cup
Vanilla extract: 1 teaspoon
Salt: pinch
Oil: 1/4 cup
Milk: 1/4 cup
How to :
Combine flour, baking powder, baking soda, milk powder, cornflour and mix it well. Sift the dry ingredients 3 times and set aside . In a large mixing bowl, add the eggs , vanilla extract, salt and beat it using and electric beater , stand mixer or a hand whisk until it becomes frothy and pale in colour , the volume should double and thick Gradually add in the sugar and beat it in high speed for 10 minutes or until it becomes pale and frothy. Add the milk, and oil into this egg mixture and gradually inco-operate the liquid using a spatula or a wooden spoon . Then add the dry ingredients in small batches into this egg mixture in three batches and gradually fold it in. The mixture must be lump free and in silky consistency. Pour the batter into a 8 or 7 inch baking tin lined with butter paper . Preheat the oven for 180°c for 10 minutes. place the baking tin in the oven and bake it for 30 - 45 minutes or until the skewer inserted comes clean.
So now our cake is ready and fresh out of the oven . Let it cool for a good hour and let's make a delicious and creamy frosting for our cake
For that you will need :
Butter : 200 gm
Icing sugar/powdered sugar :
2-3 cups (sifted)
Vanilla essence : 2 teaspoon
Cream/milk : 1 - 2 tablespoon
(if needed)
How to :
Add the room temperature butter ( do not add melted butter) it should be in squeezably soft . Beat the butter(unsalted) in high speed for a good 10 Minutes using a electric beater or a stand mixer. I don't suggest using a hand whisk as it is so time consuming but you can do if you don't have an electric one . Now gradually add one cup of sugar in batches and vanilla . Beat it well untill all the sugar is mixed and dissolved , add another cup of sugar powder or icing sugar in batches and beat it well , add one more cup in batches . If the butter cream is not stuff enough go on and add one more cup . Don't worry if the butter appears split , add some more sugar and it will become good as new . If your butter cream appears too stiff add a table spoon of milk or cream and mix and check the consistency . Place it in the fridge for couple of minutes only .
Now let's start assembling
Slice our cake into two or three even layer according to your wish take a plate or cake board , add a small dollop of cream and place our first slice . It is ideal to put the top slice as down layer . You can use simple syrup on your cake if you wish ( ¼ cup sugar mixed with water 1 cup , boiled and cooled) . Add the butter cream in layers . You can add the butter cream as much as you want in between layer . Flat it with a palette knife/ icing knife , repeat the process in the next layer . Use the down base portion of our cake as the top layer as it will be so flat and even . Cover the cake with butter cream and smooth the sides using warm water and old credit cards . Refrigerate the cake for a minimum of one hour . You can garnish the cake as you wish with some fresh flowers , fruits or chocolate shavings . Anything aesthetic is always cute .
